Prime Brisket Quesadilla With Cotija Cheese

We've been eating and enjoying that Prime Brisket I cooked day before yesterday so much that we really needed to eat something else. But it was just so darn good that we had to have more tonight. 

So I came up with the idea to make a quesadilla with it, along with that Cotija cheese we had left over from the Street Corn cook I did. 

Well, it turned out to be surprisingly good.
