Turkey Legs

So, these were delicious. My son and I sliced off a little of one and the rest went in a soup. Turkey legs in general kinda gross me out. Just too many tendons and such to eat right off the bone.
I hit Google in search of answers and sure enough there is a video of a guy pulling the tendons out and making a turkey leg pop wrapped in bacon. I think I prefer the skin ... but has anybody done this? It didn't look too complicated if it actually works. I invision pulling half the meat out and destroying the thing.
