In the ABT thread the other day @tonyled mentioned refried beans and cheddar cheese as a filling. I decided to give it a try.
Refried beans with Dizzy Pig Fajita-ish:
Topped with grated cheddar cheese:
Wrapped in bacon. I decided to try half without toothpicks:
Some more Fajita-ish, I'll probably go lighter on the top coat next time, they were a bit salty:
Indirect on the small. Started out at 250* and let it drift up to 350*:
Finished:
These were really good, will be adding these to my appetizer rotation. Made for a nice afternoon snack.

Very nice and inventive variation. I always wrap the bacon tight and have not needed the toothpicks.

Wrap those things like the end of a hockey stick, tooth picks become optional. Must try retried beans and cheddar - maybe even adding a chipotle in adobo, smashed with the immersion blender and mixed with the beans....My goto has always been chorizo sausage and cream cheese - time to get out of the comfort zone.Delta B.C. - Whiskey and steak, because no good story ever started with someone having a salad!

I never go through the trouble of making ABTs if it's just for me, but when I've tried them.... Mmmmmmm, so good.

glad you liked them! i tend to experiment and figured that one out a while back
try a sweet rub to offset the saltiness. i like pecan or a sugar maple. it sorta candies the bacon -
