Boneless Beef Short Rib Cook

I'm looking to cook some boneless beef short ribs from Costco this weekend and have them tossed into a sandwich.

Plan is to smoke them for a few hours and then braise them possibly in the pepper stout braise.

Plan is to smoke for 3-4 hours and then braise them until 200 internal temperature. I've done a blade roast with ease but I'm wondering if the boneless beef short ribs is a good cut to use for pulled sandwiches?

Any advice would be appreciated I've done some ready and most people claim they aren't the easiest to get to that tenderness where each piece pulls apart.
