Had a need for some spares.

Options
Spare ribs, 250 degrees, peach wood, 6 hrs, spritzing with apple juice every hour, finished with some Sweet Baby Rays. Top looks burnt but it's just a nice bark. I normally wrap my ribs to get them very tender and fall off the bone, it's how the wife likes them. I did these the way I like them today, with a little bite and tug. They were so good they got my best paper plate. Wife came home from work and tried one.  I didn't say how I did these and asked her what she thought of them? She just said "Amazing!"
