Post hurricane advice needed

Survived Matthew relatively unscathed.  Here's the problem. Power went out about 430pm yesterday and it's still out. I have 10# of pork belly curing in the beer fridge and when I checked it, the temp was 48 degrees.  I took it out and put it in a cooler on ice. Is it safe to eat now or should I trash it and start over? Today is day 7 of the cure.

Day 7 that thing is cured. You could leave it on the counter at this point and it would be fine.

I always say this as an attention getter. But in reality, you'd really want to hang it.

Literally sitting on the counter it would have a wet surface (the contact area). Ideally the surface should dry

hanging it allows the surface all sides to dry

    other than that. Yep

(edit: doesn't even need the fridge to cure actually. But don't tell anyone that)

Sounds like you're golden - glad the hurricane didn't affect you too much
