Cuban Chicken, Chiles and Corn

I'm still here. Lurking a few days a week. Cooking when I can which hasn't been much lately with Duke's infant swimming survival skill classes. Don't post much because cooks either have to be super simple and quick to get on the table if we eat with him, or if we cook after he goes to bed...well then its usually also something easy and quick as we're tired and hungry then. Here's some chicken that was marinated in a Cuban lime and garlic marinade for 24 hours the other night. Also, threw on some chiles (not sure if they were Hatch of not) and some corn on the cob. The corn got sliced off the cob and mixed with some chiles in a cream corn recipe that Mrs. G grabbed from somewhere off the ole interweb.

Almost done.

Sorry there were no plated pics. Chicken was good, corn was...meh. Wouldn't use that recipe again.

For @Mickey who made a comment on my last post about no pics of Duke lately, here's one from Monday at his daycare on the first day of school. Why they say it was the first day when he goes year round, I have no idea.

Anyway, that's about all I got right now.

    Where did you get the marinade ?
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

    Thank you, Sir. I wish I could say it was homemade, but it was just the Tom Thumb brand. Signature Select. Wasn't sure what it would taste like, not much Cuban food experience, but good enough I'll probably look for a recipe next time.

    Thought about posting a video of his survival swimming, but not sure how. Hard to watch them try and float by themselves, but he should graduate next week and now at 20 months, the kid can fall in a pool, come to the surface and float all by himself and can even swim a bit and crawl out on the steps. :)
