    Copied the sauce to my recipe app..  I need a real good one and excited to try it.  We love cheese enchiladas.  Thanks

    That sauce recipe looks very close to my own; if you use lard instead of vegetable oil, it will be mine!  (I've also used bacon drippings, delicious but not traditional).

    hahaha, I was about to tell you about a delicious red enchilada sauce recipe... until I realized you were using it! Try her enchilada slow cooker soup sometime. Uses one recipe of that sauce. Wonderful!

    I probably got the recipe originally from you!  I will have to try the soup for sure.  :)

    So far I have only tried the premade chicken enchiladas from Sam's.  I know that might be heresy but they are pretty darn good. I am sure yours are better though especially with the grilled chicken.  That rice looks really good as well.  


    Which came first the chicken or the egg?  I egged the chicken and then I ate his leg.

    I went ahead and made these last night.   Got home a little later than I thought I would so finished in the oven rather than the egg.   Delicious.  I agree with a lot of reviews on the site--  making the homemade enchilada sauce is key.  So much better than anything you can get in a can.  I went with 2 tablespoons of chili powder and added a couple tablespoons of tomato paste.   Next time I will definitely double the recipe so I have some stored in the fridge.

    Made these yesterday, including the sauce, which was made even better by the fact I had just made Alton Browns homemade chili powder a couple days ago using 4 different dried chilis.  Shredded a couple chicken thighs I had cooked previously in the kamado and added a can of Kirkland chicken breast to bring the total chicken up to 1-1/2 lbs.  These were the best enchiladas I've ever made.  Can't wait to try the same sauce with pepper-stout beef!

    Made this last night too! used leftover chicken (S.V. bone-in skin-on breasts) shredded & tossed w/ onion/green chile.  Oven bake, but it was very nice meal.  Followed entire recipe close, except did 50% ancho chili powder in sauce, and added some summer corn (we gots tons of it in ohio) to the wraps before bake.  Thanks for sharing . . and Let me know if you have a good GREEN enchilada sauce!
