Any brisket aficionados up late? question about my post cook wrap- (happening now)

Options
Howdy-

I am making a brisket for a friend, and have been since early this morning.

I am about 10 degrees away from being done and wondering about wrapping it and putting it in the cooler for the night when it is complete.

it's 10:30 here now and I figure it will be done around 11pm.

But I am concerned if I should let it sit for an hour or more, and then pull it from the cooler and go to the fridge or

-cooler all night until morning then refrigerate?

Unfortunately, as much as I would like to get into the adult beverages and let it play out, I do not have that luxury this evening.

I do plan on gifting it sliced and frozen.

Thanks for any response- Cheers!  Paul
