Yaki Onigiri Multiple Ways

Upped my game this time with five different combinations of Yaki Onigiri. Used various combinations of diced green onions, diced radishes, sesame seeds. All seasoned with Sansyo and Shichimi Togarashi and brushed with soy sauce. Really tasty!

    I've been wanting to try my hand at yaki onigiri. Any issues with it sticking to the grid? How crispy do you make it?

    I've made Onigiri 5-6 times since I go the idea from your last post about it. So glad you posted about it, because this is one of my new favourite things to eat. With a few roasted veggies it's a great lunch.

    @caliking nope, no issues with sticking to grate. I cook with fairly hot fire (~450) and raised grid. Don't flip too soon the first time. I like to get a thin outer layer that is caramelized with a soft moist interior. 

    @SkySaw I'm glad you like it, this has become one of our family's favorites too.

    We are doing Gyu Dare Prime Ribeye, grilled pork belly, miso salmon and Yaki Onigiri all inspired by the book. We cook out of this book every week.

    The brown rice was an epic fail for Yaki Onigiri. The steak, salmon, and pork belly were winners.

    I use short-grain brown rice for making it and it works out well. There are various types of Genmai, many of which have part of the husk removed. This is usually what you get when you order brown-rice sushi. I like to get the whole grain rice, so I buy the Nishiki brown rice. The rice in this photo is the whole grain Nishiki.

    good to know. Ours would not hold together. We use Nishiki as well but that's not what we used last night. We do have a rice cooker that makes good sticky rice so I'll try again.

    @_Moose_ the book is "The Japanese Grill" (link below), and I highly recommend it...enjoyed every recipe we've cooked so far.  I've probably posted on these cooks multiple times, I keep going back to them and doing new variations.  e.g. http://eggheadforum.com/discussion/1156450/chicken-yakitori-and-yaki-onigiri

    I started to post a message saying that I must be the only clueless guy on the forum because this entire thread is incomprehensible to me.  

    I have no idea what Yaki Onigiri might be, much less Sansyo or Shichimi Togarashi.  It looks like rice, but is there something inside, or is it just rice out of the pot?  I gather a bunch of people here love it, but, not having a clue and just looking at pretty mysterious pictures, I can't say it looks terribly appealing.  Maybe if I had any idea what it was, what was in it -- anybody willing to post a recipe, maybe describe what it's like to eat this stuff?

    @Theophan it is very easy and a fun cook. At the most basic, Get sushi rice and cook per directions. Form into balls. Grill raised direct until the outer layer is just barely caramelized and hard. Brush lightly with soy sauce and cook another 30 seconds per side. 

    The Sansyo etc are spices and optional. You can also optionally mix in some additional ingredients like sesame seeds.

    I like rice, like soy sauce, not sure grilling a ball of rice really sounds very good, but there's so much enthusiasm about this here I may have to give it a try.

    I thought sushi rice was pretty sticky -- what do you to to keep them from sticking to the grid?

    @Theophan I don't do anything special, but make sure the grate is hot and don't flip too soon. Also be sure to thoroughly rinse the sushi rice before cooking.
