So here's the story my uncle has been making big candy. He's calling it something else. I haven't tried it yet but he's been doing a lot of smack talking. Yall know I got to shut him down. So I'm needing a little help with a good recipe. Thanks in advance.

There are a bunch of recipes on the interwebz for pig candy. Why have I not tried this? Sorry I'm no help.
-
@texaswig: Sorry, misunderstood. Your title read "pig bacon recipe wanted" while your post said "big candy". Never made "pig candy" but if it's as good as it sounds, it will be worth the trouble.

Some kind of brownish sugar, red pepper flakes or cayenne, other stuff (ginger, black pepper, etc). Spread on slices of bacon, bake in oven on a rack, let cool, eat.

You're welcome wig.
Don't cook too hot, you really don't want that sugar burning. -

I made salted caramel bacon. I cooked the bacon on the grill then the last 15 minutes I would coat with caramel syrup. I got it in the icecream topping section of the store. Then sprinkled on some coarse salt. It was decent.

@texaswig Go all in. Here's a post I did on chocolate dipped pig candy with nuts. Next level stuff. Whole new game for pig candy

I cut the bacon in half then coat them in 2 cups of sugar and 1 teaspoon of cayenne mixture. Foil on a cookie sheet and a cooling rack on top of that. Lay the bacon on the racks and then bake at 350 for around 30 mins. Just keep checking on it and rearrange them as they cook. It will firm up once it cools so pull it out before it turns dark. Cool the pieces on an empty plate or cookie sheet. You will want at least 3 lbs of thick bacon and will need about 5-6 cups of brown sugar.

Does this need to be refrigerated, if not, how long does it keep in a Ziploc bag?
-
A great appetizer in the Fall (for Fall flavors) is a dried apricot half, wrapped in a whole fresh sage, wrapped in bacon. Brush with melted apricot jelly when bacon is almost crisp.KelleyEgging with No Joke Smoke (Bruce), enjoying small town life in Brenham, TX., the home of Blue Bell Ice Cream. I use Texas BBQ rub original, maple syrup, brown sugar and a little cayenne. Smoke for 2-3 hours @ 225, try to let rest before eating so it can firm up a little.
