Rudy's rub... Nothing special
Basically stacked on top of each other
Fat side down
Pecan and apple chunks... Lots
Went 13 hrs which seemed fast
Digiq and thermo disagreed on temp
Pulled at 190-205 depending
Ftc for 4 hours
Pulled....
Phenomenal pork. Can't figure it out. Best I've ever done. Maybe the best I've had. Juicy and tender.

That bark looks pretty killer.

Agree with the lucky pig - with a faster cook, I bet that means he was extra fatty/marbled and delicious - like prime beef cooking faster than select.
