Egged 2 butts Friday... Same as usual 

Bought at Sam's.. 2 10lbs 
Rudy's rub... Nothing special 
Basically stacked on top of each other 
Fat side down 
Pecan and apple chunks... Lots
Went 13 hrs which seemed fast
Digiq and thermo disagreed on temp
Pulled at 190-205 depending 
Ftc for 4 hours 
Pulled.... 

Phenomenal pork. Can't figure it out. Best I've ever  done. Maybe the best I've had. Juicy and tender.

    13 hours seems slow for a SAMs butt.  I usually do them in 9, but much hotter... Generally around 275

    That bark looks pretty killer. 

    I'm thinking going heavy on the wood had something to do with it. I think we tend not to use enough wood in the egg for these long smokes.

    That was my thought.  Some strawberries taste better than others.  No reason why some pigs can't taste better than others.

    Agree with the lucky pig - with a faster cook, I bet that means he was extra fatty/marbled and delicious - like prime beef cooking faster than select.  Pork is so lean these days, according to Julia Childs..  in like 1985, and I'm recalling this after 3 beers, so it must be true.
