1-cup kosher salt
1-cup brown sugar
1-tablespoon cumin
1-tablespoon allspice
2-tablespoons ground ancho chili
1-tablespoon granulated garlic 
1-tablespoon fresh ground pepper 

Smoked over cherry and apple wood at 300 until it reached an internal of 165.  Best turkey I have ever eaten. My kids are young and very picky when it comes to everything including BBQ and yet their plates were clean.
