Whole Roasted Herbed Red Snapper

I love all seafood, especially when egged.  This was dinner for two.  Whole roasted snapper with garlic, thyme, basil and lemon.  Smoked indirect with 2 pieces of grapevine wood.  Perfect subtle smoke profile.  It was seriously delicious.  Broccoli and wild rice side embellished with veggies.

    I am a huge fan of Seafood too. So far the only fish I have prepared is Salmon. It was delicious. I am somewhat intimidated with fish on the grill.

    Looks fantastic...
    Another great way is Snapper on the Half Shell.
    Filet each side but keep the scales. Cook raised direct.
    This is not my photo, just grabbed from google.
    Friend took me to restaurant in Houston several years ago and it was their signature dish. Easy way to cook and as it curls little it holds all the butter, juices and seasoning.

    Excellent looking fish.  I've seen the whole snapper at the store HEB and Costco but haven't tried it.

    @Photo Egg that's how we cook redfish, easy least and it's tough to screw up.

    I know allot of the Red Snapper from our local fish house in Galveston, Katie's Seafood, goes directly to H.E.B. Lucky enough to make a couple trips on their boat. Great family.

    Even a blind (ha!  kinda goes with your handle) squirrel finds a nut every once in a while.  Lets see if this jack-leg can string a couple good cooks together first to see if he's legit.

    Looks great bro!  I wish I could get whole ones around here.  All I can get are filet.  I typically blacken too.  Did you eat the eye balls?  They are surprisingly very sweet.  Almost like candy.
