Going simple tonight... Caught the meat counter at Wegmans at just the right time before these beauties disappeared. Probably the best prime filets I've ever been able to lay my hands on... Also, the Titos ain't bad either.

Looks Great. Can I ask you if you have a ice maker that makes the large cubes? I'm looking at getting a Scottsman that makes what they call a gourmet cube that's a inch or so in diameter. Steaks look great.

Lucky olives
great looking steaks. Killer marblingKeepin' It Weird in The ATX FBTX -
I like olives, but remember, they take up valuable alcohol room
and i'll be honest: i never see marbling in filets, let alone like that. Even choice rately have marbling. Choice filets just tend to be bigger, whole (not cut up and slashed all to hell).

Thank you everyone... Got to the point that I figured how many times can you see me putting steaks on the coals LOL
these were so well marbled, I couldn't help myself, had to share them. Cooked them at reg grate height and just flipping and turning as needed.
They turned out to be the most tender and flavorful filets I've ever had...

Came down with endocarditis just after Labor Day, still dealing with the effects and possible long term damages.
