Apple Pie Stuffed Loin

I tried this recipe from Eric Mitchell's book "Smoke Like A Pro". Very easy and very good. I used the Dizzy Pig Pineapple Head for the rub and a can of apple pie filling for the stuffing.

    Thanks @SGH. The filling was good but could have used a little help. I used the Lucky Leaf brand and thought it was a good starting point but a little bland. Any suggestions as to what might go well with the apple pie filling?.

    I should add that I brined the pork and used grated cheddar cheese with the filling. (as per the recipe)

    Thanks @johnmitchell . It wasn't nearly as sweet as I expected. I think next time I will apply the Pineapple Head to both the inside as well as the outside. As I commented to @SGH, I think it was a little bland but it has great potential.
