Semi-OT: Turkey and Broccoli Casserole

Tossing this idea out there for those of you who might be looking for different "make ahead meals" for the freezer.  A thread about weekly planning popped up a couple of days ago, so I thought I'd share this one.

This is one of our go-to casserole recipes that we make in bulk every couple of months for the freezer.  It freezes perfectly and tastes the same as if was made all in one day.  We made 8 of these a couple of months back with leftover turkey from Thanksgiving.  It works great with chicken as well.  Just for the love of God, do not boil the chicken as stated in the recipe link.  LOL. Just use egged chicken or turkey.  =) It is on our weekly rotation.

No exact recipe, but here is something close.  If you're making it ahead of time like we do for the freezer, make sure to make extra of everything.

We do add about double the amount of rice her recipe calls for, along with an extra can of cream of chicken soup to compensate for the extra rice.  We also usually just use uncle bens boil in the bag rice, and when the rice is done, we take the bags out and throw the broccoli in the rice water to par cook.

Oh, and the rectangular disposable foil pans are awesome.  Just layer your casseroles into the pans in whatever portion you prefer, top with foil, place them into gallon sized freezer bags and voila.  Casseroles for months.  And there is no need to cook them for the 40 additional minutes before storing them in the freezer.  Thaw and cook as normal.  Good stuff.
