Ham hocks and turkey necks ready now for New Years black eyed peas and greens. Smoked with nothing but pecan/cherry wood. 

Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now). Plus a couple Pit Boss Pellet Smokers.

    Couldn't find them anywhere......I usually freeze the dark meat, stock, and some rendered fat from Thanksgiving, but this year I only made turkey breasts.  Local butcher shop saved some turkey bones and gibblets for me so I could make stock for the stuffing, gravy, etc.  Saved some stock, but not the bones.

    Yesterday I went all over trying to find just some dark meat.  One of my butcher shops had two smoked turkey legs in the freezer.  I bought those, then have a breast out on the BGE for dinner.  I took some of the fat off of it for cooking the onions, carrots, and celery in and will add some of the leftover breast meat to the soup at the end.  Next year I'll be sure to have them save me a bunch of necks.....those are the best!!!!

    Turkey bean soup on New Years Day--about the only tradition my family has.
