OT Peanut Brittle with the Thermopen

Last year my wife asked me to make some peanut brittle for her mother who loves the stuff and was fighting cancer.  I'd never made it before, but knew it was highly dependent on processing it at the correct candy temperature.  I gave it a shot using the Thermopen and it turned out great.  I ended up making another batch, only I substituted pecans for peanuts.  That my friend was terrific.  If you want to give it a shot, here's the simple recipe I used.  Pictures are of a fresh batch I made today.  I know this is a BGE forum. But hey, it's Christmas.    Merry Christmas!

    I'm not sure about the bacon, but the red pepper flakes or some cayenne pepper would add some heat to the sweetness.  Great idea!
