Morning All:
Freezer was empty of Canadian Bacon so time to re-stock...10# pork loin into the cure last Sunday (used the Dizzy Pig recipe except substituted DP Game On for DP Cow Lick)...
Using three different rubs on the exterior...L to R is DP IPA, DP Game On & DP Raising the Steaks...
Onto Egg with some apple for smoke dome temp about 250...
About two hours later all were 145 to 150 internal temp so off to rest before vac-sealing...
Cut in half to seal...looking good...
Yes, the cook did taste test all three and they were all VERY GOOD!
