8lb Pork Butt

I haven't posted much, but thought I'd start with this again today.

Just put an 8lb+ pork butt on the large (about 30 mins before I thought to take pics).  Ordered some Rockwood a few weeks ago based on forum feedback, and got some DizzyPig Ragin River rub as well.  In previous cooks the charcoal has performed very well.

Pecan and Apple wood chunks throughout.  Going old school today, not using the pit master, just the chef alarm for internal temp.  Currently smelling pretty good.

Plan is to have pulled pork tonight (maybe late), and make some pork chile verde stew tomorrow evening for a party.  Will also probably roast some various peppers on the egg later to add to that pot.  We'll play it by ear.
