Mexican Street Corn

Got this from Eric Mitchell's book.  Awesome easy recipe!  Throw the corn on direct for about 10 minutes at 450 degrees.  Mix mayonnaise, lime juice and chili powder.  Slather on corn and top with crumble queso cheese.  Money.

Even the picky wife loved it!

Did you get that char on the corn with the husks still up?

I wondered about that, but not sure if it was char or seasoning.

  • Hey, save me some of that corn!

  • Yeah, I just threw the corn on the grill - no need to remove husks.  Once they cook for about 10 minutes direct, you can peel the husks/silk off easily.  Then I coated them with the mayo/lime juice/chili powder mix and topped with cheese.  Here is a pic of the toppings.

  • Looks great.  Will have to try this one.

  • Yums. Looks reasonably easy too. I could envision doing this cook while some meat rests post cook. Love it.
