What type of wood do you use when cooking a brisket? I am cooking a brisket for the first time in a long while this weekend. Seems like I used pecan last time.

I typically used mesquite, pecan, or hickory. All depends on what flavor you want.Franklin, Tn

Oak. Post oak if you can find it. The top TX brisket is mostly smoked with oak.______________________________________________I love lamp..

I would like to use oak, but it I have never been able to find oak chunks at any local stores. I live in Alabama.

They're really more likely to have 1"x4", 1"x6", etc. Any of those will work fine. They are not treated. Cut them across the grain in 1 or 2 inch sections and you can bust em up more with a hammer.______________________________________________I love lamp..
