    Well, "spa-Peggy" is kind of like spaghetti. I'm not sure what Peggy does different, if anything. But it's the one dish she's kind of made her own.

    The seared crust was amazing. I used olive oil and my own blend of brown sugar, onion, garlic, smoked paprika, creole spices, coarse black pepper and coarse sea salt. It was very Juicy, and tender, the Napa 2013 Fume Blanc worked surprisingly well, FWIW

    Don't forget the roasted tomatoes and roasted corn. Wife picked the wine, it worked. I was indeed astonished much like you, but the flavors seemed unmasked and robust, and the wine was not the center stage. I will recommend it for food enhancement. It did not suck.

    Thank you. In the summer, I will be somewhat more  cavalier with wine choices, not so much in the winter. This did work, and it was due to the fresh picked vegetables, and the crispy spicy crust. Great balance, subtle nuances that released and enhanced the plated fare. I would recommend this wine for a similar meal. Try it, you will enjoy.
    Very inexpensive too, about 15.00/bottle.

    I don't know anything about wine, but I do know good eats when I see them.  And, your plated meal more than meets the criteria.  Nice!

    Thank you for the kind words. I am doing a low and slow rib cook today, with my neighbor. We are taking down a very old and surprisingly tall Mimosa that hangs over my garage, that finally died. Wish me luck. This could go bad in a hurry without me even trying. LOL!
