1st Time FTC Butts Question

I took 2 9lb butts off at 192 IT at 12:30pm today.  They have been sitting FTC in the sun since then.  Do I take them out an hour early and unwrap before I pull?  Do I leave them wrapped for that hour, or for 30 min, or unwrap and let sit for 30min?  Help, and thanks!

    If they have been sitting wrapped for the time you stated above, they have done about all that they are going to do.  You can pull as soon as you unwrap them. Sitting longer will gain you nothing.

    Thanks @SGH.  I normall take em off, let em sit out for an hour and then pull.  That whole juices "re-distribution" thing.  Didn't want to miss out on that doing the FTC.

    If I read your time correct above, they have been sitting for approaching 4 hours. They are a done deal my friend. You can certainly let them sit out for a while if you so chose. But again, they have redistributed all the juice that they are going to at this point.

    the "rest before eating" thing is for roasts.  butts have had much of the moisture cooked out of them, and the moisture that's left is an illusion (it's not water, which is long gone mostly, but the melted collagen).  there are no reall "juices" being redistributed in a resting butt.

    FTC is really for when you are done early.  it is not a necessary step.  a butt won't be any more moist than it is when it is just finished cooking.
