Fridge/Pantry Cleanout = Quesadilla Burgers

After the bi-weekly fridge/pantry cleanout, I saw that we had the ingredients for some quesadilla burgers.  80/20 combined with chopped onion and jalapeno, seasoned with ancho chili powder and DP fajitaish.  Grilled on the MM along with an ear of fresh sweet corn dusted with chipotle chili powder.  Burgers were topped with roasted corn, fresh tomatoes, lettuce, chipotle mayo, avacado and jack cheese all on grilled tortillas, quesadilla style.

    Awesome idea. Definitely on the "to try" list.  I may even get adventurous and make cheese quesadillas to serve as the bun on either side
