Hello All,
I have just jumped in with both feet. I purchased my first BGE it is the XL model, because anything worth doing is worth over-doing!!
After a pretty successful try at Spatchcock Chicken and then some slow smoked sausage and after many hours of reading and researching this forum I have taken the plunge. Today I am cooking my very first Brisket Flat!
the grill had hit 225 and holding so the meat is going on. Wish me luck!

That is the way to do it. Just go all in. Just remember on the low and slows, let the egg do the work. Looking forward to the followup posts.

You are correct. It is the toughest part. Good luck and shoot a money shot.XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle
