Butt Temp

It's been a while since I did a butt and I can't remember what temp it should be at when I take it off the egg.  190 seams to ring a bell but I would like to be sure of that.  Thanks, Mark

Agree that bone test is best; when there is a bone. Otherwise, probe should slide in and out resistance; usually in low 200's as @lousubcap said.

I agree with the above. For some reason 203 seems to be the perfect temp.

I usually set my probe alarm for 195 and take it out at 196. I let it sit covered for 20-30 minutes and the bone pulls right out.
