It's been a while since I did a butt and I can't remember what temp it should be at when I take it off the egg. 190 seams to ring a bell but I would like to be sure of that. Thanks, Mark

I usually set my probe alarm for 195 and take it out at 196. I let it sit covered for 20-30 minutes and the bone pulls right out.
