@Mattman3969... like the chuck idea. Never thought about smoking a chuck, only grinding it for burgers!
@fishlessman... never done bologna although I've heard it's great smoked. Any tips on what I should look for in buying bologna to smoke?
@Acn... lamb and fish are probably not going to be considered since we really don't like either.

If you are going for loney I recommend boars head. I tried an el cheapo chub once and it was too salty for me. You might try the low sodium boars head and then you can add more rub. They were out of the low sodium last time I did one, but the regular was still good.

How about ice cream? I saw a poster on another forum who smoked the base cream mixture rather than cooking it on the stove, then would add smoked fruit to the base and put it into the ice cream maker. I haven't done it, but it's on my BBQ bucket list.Always seeking the high I experienced from my first true BBQ experience.
