Tri Tip, with Beans & Greens

Cooked a tri tip on the egg the other night, with beans and greens cooked inside as sides.  Rubbed the tri tip with a new espresso rub and got it on the egg raised indirect at 275, let it go until IT was 115:


Got an orange spot at the back of the egg, pulled the indirect piece and got a little char on there while bringing the IT up to 128.  Pulled and let it rest.


Sliced and then served; beans were mayocoba beans, cooked with onion, celery, garlic, and green chiles, I put a dash of hot sauce on mine.  The greens are a mix of Tuscan kale and rainbow chard, cooked with onion and a tiny splash of chicken broth, finished with apple cider vinegar.
