Costco Brisket Flat

doing a Costco brisket flat today. Injected last night



Rubbed with Dr. BBQ Rub #67 then put on at 235 with pecan wood. Meat was 37 degrees when it went on. Put on fat side down (there was hardly any fat).  Put a little butter on it.



After one hour meat was 105. 



Then I flipped it over and mopped with beef stock, melted butter, and some of the rub.



Doing this on Ceramic Grill Store Adjustabe Rig with sliding shelf.
