Aside from an issue losing heat at the 4 hour mark, it turned out pretty good. I wrapped it a bit too early and didn't get the smoke I would have liked, but I'm still learning.

A buddy said to wrap around 6 hours. When the flame seemed to burn out I wrapped it, and didn't want and bad smoke getting to it when I put it back on.

The only time you really want to wrap (while cooking) is if you need to speed up your cook times. Otherwise, it is best to let it ride without wrapping. Bark comes out better and I feel tastes better too.------------------------------
