Stuffed thighs and stuffed breasts.

Deboned some thighs and stuffed with jalapenos, cream cheese and bacon. Split and deboned some breasts and stuffed with spinach, cream cheese and bacon. Nothing fancy but it's pretty good. Cooked indirect on the mini at 400 degrees. Rubbed with a little salt, pepper and cayenne pepper just for good measure. Due to being deboned and stuffed, I pulled the thighs at 155 internal along with the breasts.

    Do you have a small flexible knife? I use one of two for the thighs. Either a Victorinox 3 1/2 inch poultry knife or a 4" Rapala fillet knife from Walmart. Both are very effective for thighs. If you have a knife that you are proficient with, give me a shout Sunday and I will talk you through it cut by cut my friend.

    Thanks brother husker. My wife loves the green crap so I'm forced to occasionally include it. With that said, there will be no more green crap for a while!!

    It's actually very, very simple. The hardest part for most is deboning the thighs. I'm willing to bet that with just a few tips and hints, you would be stuffing them like a pro.
