Options
Best time of year to catch a good sale on Prime Rib.  I normally buy a couple and cut them into cowboy steaks.  But this year I gave the wife the option of prime rib or rack of lamb.  She decided that both would be the best.  So since she must be obeyed, who am I to argue.

I reverse seared both. Indirect @250F, then bumped up to 500F for the last couple min.  I normally like 135F, but got the beef to 140F, can't complain, was still amazingly good!

Beef got @MeatChurch Holy Cow rub
Lamb got some dried herbs










I Use to cook prime rib bone on, until I discovered the benefits of cooking it without out weigh any of with, in my opinion anyway.















Best part was deciding what to do with the trimmings…










So I added some bacon, ground it up, and made a meatloaf.










It was OutFingStanding.  



Well that was my three days of Easter.
