    Solid looking Bird. Is that some citrus in the drip pan?
    I raise my kids, cook and golf.  When work gets in the way I'm pissed, I'm pissed off 48 weeks a year.
    Inbetween Iowa and Colorado, not close to anything remotely entertaining outside of football season.

    Yep did a citrus beer, garlic, onion in the pan then did a white wine and italian seasoning injection in the bird. Also made a compound butter of sage and thyme under the skin. Was very happy.

    Thanks i normally do spatch on the xl but got a new toy. Actually prefer this as i had more aromatics.

      No need to spatchcock when you can train your birds to sit up proper like that through an entire cook. :lol:
