I dismantled a rack-o-pork from Costco into about 5 two-rib pork chops that were at least 2 Inches thick.  Cooked them to about 120 IT and let them sit until they reached 130. Then a quick sear on all sides. They ended up about 138 to 140. Wow were these great. A perfect medium and so juicy.
