We have a recipe from a chef in Anguilla for butternut squash soup he called "pumpkin" soup. Very Caribbean. He made for us and write down the "recipe" but didn't give much in terms of measurements of the ingredients.
Would love to see this recipe.
The garnish of bread and parm? and green onion is a beautiful finish.New Albany, Ohio -
I'll see Cazzy's DAMM and raise him 1. My butternut soup looks like a first grader made it compared to yours.NEPA, Med egg,

some butternut large diced.
3 or 4 green onions
2 soaked dried chipotles ( save the water)
half red onion
1 or 2 cloves of garlic
one slice of french bread each bowl.
Saute the seasoning ingredients in evoo, add the diced butternut and let cook few minutes.
Add the water of the chipotles and more warm water to cover.
Cook until the butternut is fork tender.
Take off of the egg and blend. Season.
Cook the bread like a bruschetta, cut it in square and add it on top the soup.
A touch of fresh evoo and Parmesan or Grana strips
