I let the bird dry overnight in fridge. Then a coat of evoo and Penzeys roasted garlic. And a stick of smoked butter under the skin. Ice bag on the breast for an hour. 350-400 . Indirect . Hit the breast with hot fire bricks at the end for crisp breast skin

Im thinking thats how the tgiving bird is getting done this year. My new poultry shears should do the trick!
