Sunday roast chicken + cast iron potatoes and shallots

Spatchcocked a big roaster chicken. Rubbed with Tony Cacherie and Lamberts Sweet Rub-o-Mine. 400 indirect. Cast iron skillet with new potatoes and shallots.
Chicken was good, potatoes and shallots sent family into hysteria they were so good. Will definitely do them again.

Nice cook. For a different flavor, put that skillet under the protein and let the drippings add to the pan.

Nice cook. There's plenty of room on the XL for that cook. I've got a chicken and some SLBL breast cooking now, but the wife is roasting the potatoes in the oven.
Any road will take you there if you don't know where you're going.
