Thanks everyone. I have been slow cooking pork shoulders and ribs on a Weber gas grill for a couple years using foil packets filled with wood chips. These cooks consisted of changing the wood packets and refilling the pan of water every hour for 13-14 hours. It's going to take some getting used to with the Egg since I won't need to lift the lid every hour to check on things.
