Ended the day with a burst of motivation: Santa Maria Tri-Tip (or the closest the Cedar Park Costco could get me, apparently not enough demand so they discontinued in Texas), Bloody Mary Tomato Salad, Garlic Lemon Kale/Spinach Mix, and (thanks to SWMBO) Pao de Queijo. A very tasty meal, but maybe I set the bar a bit high, I need to top this for a valentines cook tomorrow.
Cooked the tri-tip reverse sear and pulled at 125 IT and let rest while I did the kale; turned out perfect medium rare.
Whatever the cut was, it was just about indistinguishable from a tri-tip, but the grain ran a bit different.

The meat alone looks incredible, but you get all kind of bonus points for presentation. After I googled "Pao de Queijo" and realize they are little balls of cheese bread, I now want to dip 4-5 of them in the beef juice on that plate.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

@caliking My sister-in-law was married to a Brazilian and we learned to cook them from scratch, but then they let on a secret...the store bought frozen ones are just as good. Now we cheat and use the store bought ones, which we can find here in Texas in the frozen section of HEB and Central Market.LBGE & SBGE. Central Texas.
