driving back from Waco.  This is definitely a keeper.

 4 pieces of bacon cut into small pieces. Grilled onion on egg to soften. Place onions on top of the bacon, added the cubed Russet potato, topped with baby Bellas and 4 cloves of garlic. Egg indirect at 350 until the potatoes and bacon were cooked. Added spinach (just to be healthy). Drizzled with a greek yogurt, sour cream and chives sauce.

The pie crust was Martha Stewart Quick Pizza Dough

And it was filling, could only eat 1 and 1/2 slices.

Actually I always place whole washed tater in the microwave on setting 6 for 6 minutes.  Gets it started but not cooked.  Still takes an hour to cook a whole potato.
