Big cook for a Patriots SB party. Four racks of ribs rubbed with Swamp Venom and some frenchs mustard. Six hours at 230-250 apple/hickory. No foil, no apple juice, no sauce. Two Spatched chickens. One with Walkerswood Jerk Paste the other with a Swamp Venom compound butter. Both chickens air dried for 36 hours and seasoned under the skin.
A great win. Maybe he best Super Bowl ever.

Sweet. How were the ribs cooked up plain? (no S&P either?)
Do you serve them with sauce on the side or are they good right off the grill?
