It's going to be black

Putting an 8lb. butt on tonight. Smothered in mustard and dusted(caked) with coffee rub. It's going to be black. Looks finished already. Egg is loaded to the brim with Rockwood. Using orange and pecan chunks for smoke.

    Everytime I do a pork butt, it's windy. The worst part is, when you think it's just a steady wind and all is good, a ginormous gust blasts in and really screws crap up like blowing rub in your face or it blows the baking sheet away when you put the meat on. The wind is supposed to slow a bit later, hopefully just for a minute or two so I can put the butt on. My luck is that a 40 mph gust will blow at the same time I open the egg.

    @NPHuskerFL, tried to look it up, but what's an OD temp? Is this some kind of heating and air conditioning thing or Navy jargon?

    I'm ready to get the egg settled so I can put the butt on. It just keeps climbing. The wind is like a forced induction. 8° is not the butt temp. The probe is wrapped in foil sitting outside waiting for the butt. image

    The probes outside wrapped in foil. I'm waiting for the egg to settle in. I'll put the probe in when the butt goes on. This things outta control.

    Natural. I think this is the first time using Rockwood for a slow cook plus the wind is at about 15-20mph. Bottom and top are barely opened.

    If I put this on now and cook at 300°, what finish times am I looking at? Also, the rub has brown sugar in it, any problems that? 8lbs.

    You might be getting air in behind door because of wind. Jeep stet had that problem and s did I. I gave my door a slightly more bend so it's more snug. Made it more concave. 300 IMO is borderline with that much brown sugar. You could always wrap it when it gets to desired bark but obviously it will cook faster. I'd wait to see if it settles down. If it doesn't you lose nothin. Just less cook time. Hope this helps

    Your right, but I was hoping for approx times. I've FTC for more than 6 hours and never had a butt go over 1.5 hours per pound. Guess, I should put it on now and if it finishes early it's better than late.

    I say drop it in, go to bed.

    Set a alarm for the meat at 170 and foil to 200.  FTC and enjoy!

    Well, I know the top silicone on the bottom vent is shot, but I've never run with the vents so tight. Must just have the perfect fire.

    Good luck. I've used coffee rub several times but never on a butt. Interested to hear how it comes out.

    Woohoo...it's on. Finally got smarter than the wind. I usually use a cookie sheet to carry the meat out. Used a skillet today. Duh. Only took years to figure that one out. Fastest transfer yet. image
