Who's cooking wings on SB Sunday? What technique do you use? What is your take off temp?

Kelley, @Eggobsessed, and I are cooking chicken wings on Super Bowl Sunday, among other things. I am pretty excited about it.
How do you do yours? Direct or Indirect and at what temp? What temp do you take them off at? Are you happy with them? Favorite Rub or seasoning?
Here is our technique, let me know what you think.

We love them...favorite way to eat chicken.

Do you do yours Direct or Indirect and at what Kelley and I have a technique that we have gotten from some of you folks over the years.
- Dry uncovered over night in Fridge
- Apply our rub to them
- Cook indirect on BGE @ 375 degrees until reach 165 internal temp
- Dip them in Frank's Chile Lime RedHot Sauce then
- Let them cook until internal temp is about 195 degrees
- Sauce again and add a little more rub
We love them...favorite way to eat chicken.

That looks great. I will be doing some for the game along with some ABT's. I do my wings just as you do but I go about 330-350 degrees and a little pecan wood for smoke. Light coat of dizzy dust and then finish the last ten minutes with a wet wing rub. Don't have a preference on the sauce, I like them all. Have never cooked my wings to internal temp, just pull them when they look done.

I used to pull mine at 165, but mistakenly cooked them to 195 one time because I got distracted. I've been cooking that way ever since.
I've not added smoke... think I'll give that a try. Thanks!

My favorite....big pot of chili, any wings, invite henapple. Provide henapple with cocktails and a bed.Green egg, dead animal and alcohol. The "Boro".. TN

Looks great. I do mine naked. And I don't put anything on my wings ) pull them when crisp. Dust and dip in sauce when we eat. I like them spicy. MaMa don't

Overnight in the fridge. Indirect for 30 minutes. Turn em. Another 20 minutes. Dip in Frank's and sprinkle some DD. Another 10. Enjoy. Go Hawks.Signal Mountain, TN
