2 1/2 inch 2 1/2 pound 28 day aged Double R Ranch bone in Ribeye, planning a reverse sear at 250 in direct until 115 then pull the plate setter and get my cast iron skillet up to 550/600 and searing 2 minutes a side or until 125/128 then rest for 10 minutes while I cook some Jumbo Scallops on the CI for 2 minutes a side. Roasting some veggies and baked potatoes! I have a sous vide and was thinking of doing that until 120 then searing but I have not hit a home run with the SV yet on steaks.
