First attempt at stuffing a pork loin

7 pound center cut pork loin butterflied and stuffed with salami, sautéed spinach, sun-dried tomatoes, garlic and smoked Gouda cheese, DP raging river dusted inside and out. This was my first time trussing one and I'm sure I'll get better. I'm going to cook at indirect at 350 with some apple chunks until 140/145 IT
