Chilean Sea Bass, Oh Boy!!!

Picked up some Chilean Sea Bass Steaks today at Fresh Market for supper tonight. Did a basic rub of EVOO,Lemon Juice and S&P
Got the sweet potato stackers goin and moved on to the pesto Pretty simple pesto of parsley,garlic,walnuts,S&P and EVOO
did the Sea Bass on the small 500° raised direct till it hit 120 then dropped down for a quick sear. No pics of the egg in action but where else would I cook it??
Plated with SP stackers and some steamed veggies

great fish. Be prepared to pay like prime beef, but we live but once, right. -
It has an awesome buttery taste. I have had it a few times before but this was my first for cooking it. It might be pricey but it was still cheaper and tasted just as good as some of the restaurants we've gotten it at. Gotta splurge every once in a while and my wife loved it. I considered it a win x3.

It wasn't overly sweet but had a nice buttery taste.
