Bought a rack of pork from Costco and going to egg it tomorrow. Was thinking dp red eye or raging river rub with a chunk of cherry at about 300-350 until internal 145. Would welcome other suggestions or thought. Go Colts!!!!!

Made one for New Years and loved it. Used Mickey's coffee rub and cooked at 300 until 130 internal, then opened up the vents and seared it for a few minutes until 140 internal. It was a HUGE hit with everyone. I went back and bought another one to put in the freezer.XL,L,SWinston-Salem, NC

Sounds like a great plan to me. I have done a few of these and have always glazed them using a maple-bourbon glaze, but I'm sure they would be great with just a dry rub like you are planning.The Cen-tex smoker recently suggested a simple glaze with 1/2 part stone ground mustard, 1/2 part honey. That is what I am doing next time I do one.Which came first the chicken or the egg? I egged the chicken and then I ate his leg.

I would pull at 130 then tent it on a warm plate and rest for about 30 min..Leave the probe in and it should climb to about 140...Very juicy and real good...Good luck and enjoy..Greensboro North Carolina

These things are easy to cook and absolutely delicious. I do not understand why Costco does not sell them year round.
