Brisket Weirdness

So I got some butcher paper and am experimenting with that today. I put the brisket on at 3am at 250 grid. At 9am it was 170 in the flat and had been sitting there for about an hour so I wrapped it in paper and put it back on. I left the Mav probe in and let it go another 3.5 hrs until it said 194. I unwrapped and did the probe test and it didn't pass so I put it back on unwrapped. Over the next 40 min or so the temp dropped from 194/back to 167 and that's where I am now. Confirmed with my instant read thermometer. I bumped up to 275 grid to help finish.

Questions include could the probe wrapped in paper really have been that off? And could it really have been in a stall for 6 hours? This is only my 3rd brisket and first time wrapping. This who use butcher paper how do you track temp?

    I am not sure what happen, but I never wrap because it is another sept for something to go wrong. I like to let it ride uncovered. Maybe you had it in a fat layer or something, not sure. The stall can last for a few hours. I'm sure other's can give better advice if you want to wrap.

    Did you loose a bunch of juice when you unwrapped?? If so that could have been the issue. I have that same think happen when I u foiled a butt to crisp up the bark at the end.
